Homemade Crispy chicken fingers

2 lbs chicken breasts, cut into long but thick stripes
3 beaten eggs
all-purpose flour
1 pckg saltine crackers
your own seasoning, we use a combination of things: Adobo, black pepper, garlic powder, cilantro, oregano

Season all the chicken. Set aside.
Crumb the saltine crackers.
Start with 2 separate bowls, one with the cracker crumbs and flour, and the other one with the eggs. Add seasoning both bowls.

First dunk a piece of chicken into the eggs, then pass into crumbs. Put aside on a plate.
Once you have enough on a plate, put them in the hot oil to fry them. We have a deep fryer, so it is easier and faster, but if you don't, just put a few, do not overflow the pan with the chicken.

They are done when you see they start to get a nice golden brown.
